Dinner tonight was some flathead catfish that a buddy harvested two weeks ago and some Lake Erie walleye from a past charter trip.

Both seasoned with the same black pepper/garlic salt/Cajun 2 step then breaded with Andy's Red. Steak fries always is first. I love frying fries and that oil is clear. Flathead nuggets second then the walleye. All put into a basket and covered with some sampling going on.

For me it's flathead catfish 7 out of 10 times. The meat is just as white if not whiter than walleye and fluffy like cloud. Walleye meat is white and has that layered/flake to it. Awesome in its own glory for sure.
Now I've had both made a few different ways.

Fillet style sandwich like - walleye-
